Spaghetti of Chard with Shiitake, Cashew and Citra

INGREDIENTS

  • 800g chard (red and yellow)
  • 200g shiitake mushroom
  • 2 cloves garlic
  • 2 shallots
  • Butter
  • 80g cashew nuts
  • 150g mayonnaise – ideally bio Legumaise
  • Cup of Citra Leaves
  • Arqan Oil
  • Oud Brugge cheese
  • Mace powder
  • Black pepper
  • Coarse sea salt

PREPARATION

Wash and cut half of the chard (leaf and stalk) into fine julienne strips. Stew everything in a little bit of butter until crispy, with a splash of
water, coarse sea salt, pepper and mace powder.

Chop the remaining chard (stalks only), shiitake, shallot, garlic and cashew nuts into equal cubes and stew gently with some butter. Season and mix in the Légumaise.

Divide the warm chard spaghetti over the plates. Spoon the sauce on top and drizzle everything with a little Arqan Oil, sprinkle with cheese and garnish with the citra leaves.
