Roast Onion Stew with Chestnut Mushroom, Savory and Grated Rettich

INGREDIENTS

  • 6 onions
  • 16 large chestnut mushrooms
  • 2 garlic cloves
  • 2 sprigs of savory
  • 1 bottle of beer (recommend Super Kroon)
  • 1 small rettich
  • Butter
  • Arqan Oil
  • Black pepper
  • Coarse sea salt
  • Daikon cress

PREPARATION

Peel and chop the onions and garlic, chop 4 of the mushrooms and brown them in some butter. Season and add some fresh savory. Moisten with the beer and some water, cover and simmer for 10 minutes.

Blend into a soup and add the 12 other mushrooms. Cook, still covered, for another 10 minutes.

Place 3 cooked mushrooms on each plate and spoon the thick hot soup on top. Grate some raw rettich over the top and
finish with a few drops of Arqan Oil and some Daikon cress.
