Cold Watercress Soup with Hippo Tops and Redcurrant

INGREDIENTS
- 4 yellow carrots
- 40g fresh chervil
- 1 sheet of nori
- 1 lime
- Loose Black or Green Tea
- Black Sesame Seeds
- 1 cup Ghoa Cress
- Arqan Oil
- Black pepper
- Coarse sea salt
PREPARATION
First make the ice tea by steeping the tea leaves in water, sieve and leave to chill in the fridge.
Meanwhile peel and finely slice the yellow carrot, then cut into threads and mix with the fresh chervil.
Season and divide onto the serving plates, drizzle with the ice tea. Cut the nori into strands of about 5 cm and add to each salad. Sprinkle with sesame seeds and cress, and a few drops of Arqan Oil.
